The nutritional value of almond kernels

Recently, the latest study stated that eating almond kernels everyday can increase the "good" cholesterol content published by the Pennsylvania State University in the Journal of Nutrition .

The researchers recruited 48 volunteers with low-density lipoprotein cholesterol and divided them into two groups. One group of them ate 43 grams of almond kernels more while others were the same as another group everyday. Two weeks later, the volunteers' HDL cholesterol levels and functions were measured. It was found that the volunteers who ate almond kernels every day increased their HDL levels and their functions increased by 6.4%.

The researchers said that low-density lipoprotein cholesterol, commonly known as "bad" cholesterol, which is the main risk factor for heart disease. HDL cholesterol is "good" cholesterol, with more protein, less fat, higher density, and smaller particles, which can bring the free cholesterol attached to the blood vessels back to the liver, and then the free cholesterol would be metabolized, which helps to clear the blood vessels. The results show that almond kernels can affect HDL cholesterol and help reduce the risk of heart disease for people.
