Ingredients:
2 mangoes, 1 pomelo, 200 ml coconut milk, 250 ml whole milk, 100 ml whipping cream, 40 g granulated sugar, 50 g sago pearls, 200 g ice block, fresh mint leaves as needed.
Production Methods:
1. Bring a pot of water to a boil. Add sago pearls and cook over medium-low heat for 15 minutes, stirring occasionally to prevent sticking. When the sago has only a small white dot in the center, turn off the heat and let it sit covered for 10 minutes until completely translucent. Drain and rinse under ice water, then drain again and set aside.
2. Peel and pit 1 mango, cut into small pieces. Place in a blender with 150 ml coconut milk, 200 ml whole milk, whipping cream, and granulated sugar. Blend until smooth to make a mango-coconut milk mixture.
3. Peel and pit the remaining mango and cut into evenly sized chunks. Remove the pomelo flesh and tear into small pieces, making sure to remove any white pith to reduce bitterness.
4. Using a shaved ice machine, shave the frozen ice block into fine, fluffy snow ice.
5. In a bowl, layer some snow ice, then sprinkle with cooked sago and mango chunks. Add another layer of snow ice. Drizzle the remaining coconut milk on top, then generously top with mango chunks and pomelo pieces. Garnish with a few dried mango slices or mint leaves if desired.
