Today I’m sharing a traditional Spanish dish—smoky red pepper stewed hummus, a popular way of eating from northern Spain~ It’s a simple and healthy Mediterranean dish packed with protein. Serve it with bread for dipping; once the bread soaks up all that sauce, it’s absolutely delicious.
INGREDIENTS (Serves 3)
400g canned cooked chickpeas (homemade cooked chickpeas work too)
2 red peppers
2 tomatoes
½ onion
1 carrot
5 garlic cloves
2 sprigs fresh parsley
Olive oil, as needed
Salt, to taste
1.5 tbsp smoked paprika
A pinch of black pepper
300ml drinking water (or as needed)
STEPS
1.Cut red peppers in half. Heat a pan, place peppers cut-side down, and roast until both sides are charred and golden. Chop into pieces and set aside.
2.While roasting the peppers, chop the rest of the ingredients; rinse chickpeas to remove any slimy residue.
3.Heat olive oil in a pan, sauté onion until golden, then add carrot and garlic and fry until fragrant and golden. Add tomatoes and cook until they break down, seasoning with salt during this step.
4.Add roasted red peppers, smoked paprika and black pepper, then stir well to combine.
5.Transfer the sautéed mixture to a large bowl, add water, and blend into a smooth purée.
6.Pour the purée back into the pan, add chickpeas, cover and simmer for 10 minutes. Finish with chopped parsley.
