These cute, plump little persimmon cookies, with their vibrant orange "bodies" and bright green "stems", are not only visually appealing but also carry an auspicious meaning. Each bite offers the rich, buttery aroma of butter, layered with the distinct flavors of cheese and matcha. They are wonderfully crumbly, perfectly sweet without being greasy, making them an ideal treat for yourself or a heartfelt gift for others.
Ingredients:
88g Butter , 0.8g Sea Salt, 42g Powdered Sugar, 22g Whole Egg Liquid, 18g Milk Powder, 128g Cake Flour, 0.3g Matcha Powder, 12g Golden Cheese Powder.
Production Methods:
1. Add softened butter, sea salt, and powdered sugar to a bowl and mix until well combined.
2. Gradually add the room-temperature whole egg liquid, mixing until fully absorbed.
3. Sift in the low-gluten flour and milk powder, and mix until no dry flour remains.
4. Separate 25g of the dough. Add matcha powder and mix thoroughly. Place the matcha dough between sheets of parchment paper and roll it out to a 2mm thickness. Freeze until firm.
5. Add the golden cheese powder to the remaining dough and knead until evenly combined.
6. Divide the cheese dough into portions of about 8g each and roll them into balls. Take the frozen matcha dough out. Use a leaf-shaped cookie cutter to press out leaf shapes. Gently place the matcha leaf onto an orange dough ball.
7. Place in a preheated oven. Bake at 150°C (top and bottom heat) for approximately 22 to 25 minutes.
