There should be no one who doesn’t like eating scones. It’s full of buttery aroma and crispy texture. Adding rye flour and oats makes it healthier to eat!
Ingredients:
Low gluten flour 200g
Oatmeal 30g
Rye meal 20g
White Sugar 30g
Baking powder 30g
Salt 2g
Butter 70g
Milk 65g
Egg 1
Mixed Dried fruit and Nuts Moderate
Practice:
1.Weigh the ingredients. Here I weigh the flour (low-gluten flour, rye flour, oats, baking powder, salt, and sugar) together. Leave some egg yolks for the eggs (for brushing the surface before putting them in the oven! Beat the eggs with milk (custard liquid)) and cut the butter into small pieces. Cut nuts and dried fruits into small pieces.
2. The powder is roughly mixed first.
3. Add the butter and break it up with your hands. Here I wear disposable gloves (for convenience of operation) and slowly break it up. I think it is quite relieving.
4. Something like a flocculation is fine.
5. Add mixed dried nuts and mix well. I used walnuts, pecans, almonds, dried cranberries, and dried raisins (just follow the taste you like. For example, red beans and black chocolate are all delicious).
6. Add the egg milk and mix well with a spatula. You can use the cutting and stirring method.
7. It can be roughly formed into a ball (flour absorbs different amounts of water, so you can adjust the amount of egg milk appropriately to avoid making it too wet).
8. Transfer to a chopping board (you can also directly go to the baking sheet to shape and cut into pieces). If I want to make mini scones, I divide them into two portions. Just make one portion of a normal-sized scone. Don’t over-knead the dough and press it into a round cake shape. Don't make it too thick (it will grow taller when baking). Since the dough is dry, you can wrap it in plastic wrap and put it in the refrigerator for 10 minutes to make it easier to work with (I omitted this step).
9. Divide each pancake into eight equal pieces.
10. Brush with the egg yolk just reserved and put it into the preheated oven at 200 degrees on the middle shelf for 18 minutes. Due to different ovens, the baking time can be adjusted by yourself (depending on the status).
11. It’s out of the oven, the scones are golden in the sun, the room is filled with the aroma of butter, and you will feel happy after taking one bite.
