During the autumn and winter seasons, it's perfect to munch on some sunflower seed crackers. Sunflower seeds are naturally rich in unsaturated fatty acids and vitamin E. After being carefully processed into crackers, they retain much of their nutrients. Having a couple of bites when you have free time can not only replenish your body with energy to resist the cold of autumn and winter, but also satisfy your cravings. Moreover, they have a crispy texture, unlike raw sunflower seeds which are difficult to crack. When sitting on the sofa to watch TV or chatting with family members, holding a small plate of these crackers and eating while chatting, the warm atmosphere is instantly enhanced.


Ingredients:

290 grams of low-gluten flour, 120 grams of lard, 40 grams of butter, 140 grams of sugar, 2 egg yolks, 2 grams of baking powder, 4 grams of baking soda, 1 gram of salt, 100 grams of sunflower seeds.

Procedure:

1. Take the butter out of the refrigerator in advance and let it soften in a warm environment until your finger can easily press into it. Then, using an electric mixer, start at a low speed and whip the softened butter until it becomes smooth and the color turns slightly pale. There is no need to over-whip it.


2. Add sugar and butter, and continue to beat with the electric mixer at low speed until well combined. 


3. Add the egg yolks and continue to mix thoroughly at a low speed.


4.Mix evenly using a silicone spatula. Alternatively, you can wear gloves and stir by hand. Just make sure the ingredients are well combined; do not over-mix as it may cause the dough to develop gluten and affect the crispy texture.


5.The large dough is divided into several small pieces, each weighing approximately 15 grams. After being rolled into balls, they are placed on the baking tray, with a certain distance maintained between each piece, as the dough will gradually expand and become round during the baking process.

6.At the center of the small dough ball, use a round-tipped chopstick to make a small indentation. Place the sesame seeds around it. You can slightly press it to make the sesame seeds stick together more firmly.


7.Place it in the preheated oven (180 degrees Celsius, both upper and lower heating), bake in the middle layer for 18-20 minutes. The surface of the sesame cookies should be slightly colored when done. After baking, remove it immediately from the oven and let it cool completely. Then, it needs to be sealed for storage to prevent moisture absorption and softening.
