Today, I’m making a super simple cold dish perfect for summer! Tossed in a sesame-peanut sauce and topped with crushed peanuts for extra texture — it’s quick, delicious, and a staple on my grandma’s dining table!

Ingredients (Serves 2)

- Spinach: 300g

- Crushed peanuts: a small amount

- Pure peanut butter: 2 tablespoons

- Drinking water: 3–4 tablespoons

- Light soy sauce: 1 tablespoon

- Vinegar: 2 teaspoons

- Vegetarian oyster sauce: 2 teaspoons

- Sichuan pepper powder: 1 teaspoon (or to taste)

- Chinese 13-spice powder: a pinch (or five-spice powder)

- White pepper powder: a pinch

- White sugar: 1–2 teaspoons


Steps:

1. Prepare the sauce: Thin the peanut butter with drinking water. Add all other seasonings and mix well. Taste and adjust if needed. The sauce should be pourable but still thick.


2. Prepare the spinach: Wash the spinach. Blanch in boiling water for about 30 seconds until it turns deep green. Remove and rinse several times in cold water until cooled. Squeeze out excess water by hand.


3. Assemble: Plate the spinach, drizzle generously with the peanut sauce, and sprinkle with crushed peanuts.
