Peanut Fruit and Vegetable Salad

Have you tried putting peanuts in the salad? This healthier version of the beloved salad is every bit as delicious as the original—but thanks to the addition of peanuts, has the added bonus of nutty crunch, along with the invaluable plant nutrients the peanuts provide.

 

1/3  cup canola mayonnaise

1/4  cup light sour cream

1  tablespoon lemon juice

1/2  teaspoon salt

1/4  teaspoon ground black pepper

12  ounces (about 2 ½ cups) cooked chicken breast, cut into 3/4-inch pieces

1/4  cup seedless red grapes, halved

1  medium golden delicious apple, cut into 3/4-inch pieces

2  ribs celery, sliced

2 ounces lightly salted and roasted peanuts kernels  

 

Instructions:

Combine the mayonnaise, sour cream, lemon juice, salt and pepper in a bowl. Combine the chicken, grapes, apple, celery and peanuts in a separate bowl. Add the mayonnaise mixture to the chicken mixture and toss well to coat.
