Ingredients:

For Almond Wafer Crisps

40g egg whites

10g low-gluten flour

25g caster sugar

15g butter

110g almond flakes / coconut flakes

1g salt


For Decoration

30g 70% dark chocolate (Valrhona recommended)

5g coconut oil

A small amount of pistachio kernels


Steps:

1. Melt the butter over hot water, then let it cool slightly after melting.

2. Add white sugar and salt to the egg whites, then mix well with a whisk.

3. Add the butter, stirring while pouring.

4. Sift in the low-gluten flour and continue stirring until well combined.

5. Sift the egg white batter into the almond flakes. Gently mix with a spatula (be careful not to crush the almond flakes) to coat the almonds evenly with the batter. Cover with plastic wrap and refrigerate for 1 hour.

6. Put on gloves, take 12g of the almond batter, and place it in a 5cm circular mold (line the baking tray with parchment paper if it's not non-stick). Gently press it flat (try to keep the thickness uniform for a nice appearance and consistent crispness).

7. Put it into a preheated oven. Bake at 150°C for about 22-25 minutes or 160°C for 18-20 minutes in convection mode (the thickness of the almond crisps and the number of trays baked at once will affect the baking time). Take it out when it turns slightly brown (if not decorating, let it cool completely and store in an airtight container).

8. Put the dark chocolate and coconut oil into a water-free container, and melt them over warm water at 40-50°C.

9. Take one almond crisp, quickly dip it in the chocolate liquid, place it on a cooling rack (line the bottom with parchment paper if needed), sprinkle a small amount of pistachio kernels for decoration, and store it in an airtight container after the chocolate liquid cools down.
